Dicocco spelt (Triticum Dicoccum) is one of the oldest varieties of cereal that exist in the world. It is processed after harvest by a husking process, followed by light pearling in order to facilitate cooking while keeping substantially intact all its nutritional properties: protein, fiber, vitamins and essential oils typical of a whole grain product. Spelt is ideal for preparing soups, soups and mixed salads. It should be rinsed in fresh water, boiled directly in cold, salted water, and cooked after about 20 minutes from the start of boiling.
